Preheat oven to 200°C.
Coat a baking tray with coconut oil.
Arrange the chicken on the tray and bake in the oven for 20-25 minutes or until nearly cooked through.
Coat a large frying pan with coconut oil. Add the garlic and curry paste and stir fry for 30 seconds. Reduce heat then add the coconut milk, capsicum, broccoli and cashews. Simmer gently for 15 minutes.
Add the chicken pieces and cook gently for 5 minutes. Stir in mango and shallots. Cook until heated through.
